A Balkan street food, ćevapi is made by shaping spiced mince into small fingers and cooking them quickly in the air fryer. With whole-grain breadcrumbs mixed into the meat, it's both filling and an inexpensive option for a party spread.
Knead the beef and lamb mince thoroughly with the crushed garlic, whole-grain breadcrumbs, baking soda, salt, pepper and red pepper powder.
Shape the mixture into finger-thick pieces about 8 cm long.
Cook the fingers in a preheated air fryer at 200°C for 10 minutes, turning halfway. If you don't have an air fryer, grill them in an oven preheated to 220°C for the same time.
Don't overwork the mixture while kneading, or the fingers will toughen once cooked. Allergens: contains gluten (breadcrumbs).
If you can't find lamb mince, all-beef works too — the flavour comes out a little lighter.
