A refreshing drink from Mexican streets, agua de jamaica is made by steeping dried hibiscus flowers in boiling water, straining, and sweetening with lemon. It contains no dairy and can be bottled to take with you.

How to make it?

Boil the water

Bring the water to a boil in a pot, then remove from heat and add the dried hibiscus flowers.

Steep and strain

10 min

Let the mixture steep for 10 minutes, then strain out the flowers.

Sweeten and chill

5 min

Stir the sugar and lemon juice into the warm brew, chill it in the fridge, and serve over ice.

Reminder

Don't keep boiling once the flowers go in; add them to just-boiled water and take it off the heat, since prolonged boiling brings out more tannin and can leave a bitter edge. This recipe does not contain a known allergen group.
