Pakora, a beloved Indian street snack, gets a lighter twist here as chickpea flour is kneaded with spices and air-fried in small pieces. It is served with a coriander yoghurt sauce.

How to make it?

Make the Batter

In a bowl, mix the chickpea flour with the onion, coriander, green chilli, cumin, chilli flakes, baking powder and salt. Add the water and bring it to a thick batter consistency.

Prepare the Air Fryer Basket

Lightly grease the air fryer basket with the vegetable oil, then arrange small spoonfuls of batter in the basket, spaced apart.

Air-Fry

12 min

Set the air fryer to 200°C and cook the pakoras for 12 minutes, turning once halfway through, until golden and crisp. If you don't have an air fryer, bake them on a parchment-lined tray in an oven preheated to 200°C for 15 minutes.

Make the Sauce and Serve

Mix the strained yoghurt with the remaining coriander and adjust the salt; serve alongside the hot pakoras.

Reminder

Important: don't make the batter too runny, or it will stick to the air fryer basket. If you don't have an air fryer, bake on parchment paper in an oven preheated to 200°C for 15 minutes. Allergens: contains dairy (yoghurt).
