A hearty Mexican dish, albóndigas is made by simmering cumin-spiced beef meatballs in a sauce of tomato and smoky chipotle chili. Almond flour is used instead of breadcrumbs to keep the carb content low.

How to make it?

Make the meatball mixture

Knead the ground beef with the egg, almond flour, cumin, garlic, coriander and salt, then shape into walnut-sized meatballs.

Make the sauce

10 min

Sauté the onion in olive oil until translucent. Add the grated tomato, chopped chipotle and chicken stock, and simmer for 10 minutes.

Cook the meatballs

20 min

Drop the meatballs into the simmering sauce one by one, cover and cook over low heat for 20 minutes.

Serve

5 min

Sprinkle with chopped coriander and serve hot.

Reminder

Drop the meatballs into the simmering sauce one by one, without letting them touch; otherwise they fall apart and stick together. Allergens: contains egg and tree nuts (almond).
