How to make it?

Prepare the fruit

Wash the blackcurrants and toss them with the sugar and lemon juice.

Let it macerate

Cover the mixture and set it aside for 10 minutes so the fruit starts releasing its juice.

Boil it

Transfer the mixture to a pan and bring to the boil; once boiling, lower the heat and simmer for 20 minutes, stirring occasionally, until thickened.

Jar it

Spoon the jam into clean jars while hot and seal the lids.

Reminder

Take care not to crush the blackcurrants while stripping them from their stems, or they will release juice too early. To test the set, drop a little onto a plate and let it cool.
