Prepare the pumpkin

Peel the pumpkin, remove the seeds and cut it into small cubes.

Boil the pumpkin cubes with the sugar, ginger, cinnamon stick, cloves and lemon juice in a pan; once boiling, lower the heat and simmer for 30 minutes, stirring occasionally, until the pumpkin flesh breaks down and thickens.

Jar it

Pick out the cinnamon stick and cloves, then spoon the mixture into clean jars while hot.

Reminder

Cutting the pumpkin into small cubes shortens the boiling time and gives a more even texture. Stay by the pan while it boils, as the thickening mixture can catch on the bottom.
