Boil the lentils

Arishta is a time-honoured Armenian dish made by cooking thin homemade noodles with red lentils and finishing with a drizzle of browned onion. Getting the noodles and lentils to the right texture at the same time makes timing important. Since it holds its flavour once cooled, it packs easily into a lunchbox for the next day.
Boil the red lentils with the water and salt in a pot for 10 minutes.
Add the noodles to the boiling lentil water and cook for another 8 minutes until al dente.
Heat the olive oil in a pan and fry the thinly sliced onion until deep golden.
Drain the noodles and lentils, divide among plates and drizzle over the browned onion to serve.
Add the noodles while the lentil water is at a rolling boil to keep them from sticking; noodles dropped into lukewarm water clump together. Allergens: contains gluten (noodles).
Browning the onion together with a teaspoon of mint adds the fresh aroma typical of Armenian home kitchens.
