Austrian trout spread is a quick dish made by blending smoked trout with olive oil and lemon juice into a smooth spread. Fully removing the bones from the fish is the most critical step for the spread's texture.

Debone the fish

Check the smoked trout piece by piece with your fingers and remove every bone.

Mash the deboned trout with the olive oil, lemon juice, dill and salt using a fork until smooth.

Transfer the spread to a bowl, chill in the fridge for 15 minutes and serve.
