Quince brew is a spiced drink inspired by Argentina's quince preserve tradition, made by quickly simmering chopped quince with cinnamon and cloves in a pressure cooker and straining the liquid. With no dairy involved, it stays light, and kept low in sugar it serves as a low-calorie hot drink. The quince's natural pectin gives the drink a gentle body.

How to make it?

Pressure-cook the quince

Put the chopped quince into the pressure cooker with the water, cinnamon stick and cloves, seal the lid and cook for 15 minutes once it comes up to pressure.

Strain

Release the pressure, open the lid, strain the liquid to separate the quince pieces and spices, without pressing on the pulp.

Finish with lemon juice

Stir the lemon juice into the strained liquid.

Serve

Pour the drink into cups and serve hot.

Reminder

Don't press down on the quince pieces while straining; squeezed pulp clouds the drink and leaves a bitter edge.

Düdüklü tencerede 15 dakika yerine tam 20 dakika pişirdim çünkü elimdeki ayva parçaları biraz büyüktü, süzdükten sonra sıvı beklediğimden çok daha koyu ve kıvamlı çıktı.
