Azerbaijan's miniature dumplings, dushbara, are made by cutting thinly rolled dough into small squares and filling each with a spiced minced meat mixture. Served with garlicky yoghurt and dried mint butter, it also finds a place on breakfast tables.

How to make it?

Prepare the dough

Knead the flour with the egg, salt and a little water into a firm dough.

Prepare the filling

Mix the minced meat with the grated onion and salt.

Shape the dushbara

Roll the dough thin and cut into small squares, place a pinch of filling in the centre of each and press the edges closed.

Boil and serve

5 min

Boil the dushbara in salted water for 5 minutes, drain, then top with crushed-garlic yoghurt and melted butter infused with dried mint.

Reminder

Roll the dough as thin as you can — if it stays thick it turns tough once boiled. Press the edges of each square firmly closed, or they will open during boiling and the filling will spill into the water. Allergens: contains wheat (gluten), egg and dairy (yoghurt, butter).
