Bring the water, sugar, cinnamon stick, cloves and orange zest to the boil in a pot.
Place the pears in the syrup and simmer covered over low heat, turning occasionally, for 30 minutes until soft.
Cool the pears in the syrup to room temperature, then slice and serve.
Do not forget to turn the pears occasionally while poaching, or one side softens more than the other. Since the sugar is kept low, the compote should be eaten within a few days when refrigerated.
If the pears turn out too firm, leaving them in the syrup for another 10 minutes is enough; there is no need to cook them again.
