Spiced mixed dried fruit compote is a wintery French dessert made by simmering dried apricots, plums and figs in cinnamon-and-clove-spiced sugar water until soft. Soaking the dried fruit in warm water beforehand helps it soften evenly and quickly once simmered. Packed into a jar, it also travels well in a picnic basket, making it a practical option for a snack.

How to make it?

Soak the dried fruit

Soak the dried apricot, plum and fig in warm water for 20 minutes to let them start softening.

Prepare the spiced water

Bring the water to a boil with the sugar, cinnamon and clove.

Add the fruit and simmer

25 min

Add the drained dried fruit to the boiling water and simmer over low heat for 25 minutes until soft.

Jar and chill

120 min

Transfer the compote and its syrup into a jar and chill in the refrigerator for 2 hours.

Reminder

If you skip soaking the dried fruit and drop it straight into boiling water, the outside softens while the centre stays hard — don't skip the soaking step.
