Homemade pumpkin ice cream with an autumn touch, made by mixing roasted pumpkin puree and cinnamon into a cream base. With its spiced, velvety texture, it's a distinctive cold dessert for seasonal tables.
Warm the milk and half of the sugar without boiling.
Whisk the egg yolks with the remaining sugar, gradually add the hot milk, and cook over low heat until it coats the back of a spoon. Careful: do not let the mixture boil.
Add the pumpkin puree, cinnamon and optional ginger to the mixture and stir well; chill in the refrigerator for at least two hours.
Fold in the cold cream and transfer to an ice cream maker, or place in a deep container in the freezer, whisking occasionally during the first few hours.
Important: Strain the pumpkin puree well and remove excess water before adding it to the mixture, otherwise the ice cream may turn icy. Allergen: contains milk and dairy products, egg. Can be kept in the freezer in a sealed container for two weeks.
If you roast the pumpkin in the oven yourself and puree it, you'll get a result that's less watery and more aromatic than store-bought canned puree.
