Besan chilla is a savoury Indian crepe made by thinning chickpea flour with spices and cooking it in a thin layer. Air-frying it without oil makes for a quick, light breakfast.

How to make it?

Mix the batter

Gradually whisk the water into the chickpea flour to make a smooth, pourable batter. Stir in the onion, tomato, turmeric, cumin and salt.

Prepare the basket

Lightly grease a pan that fits your air fryer basket with olive oil, and pour the batter into it as a thin layer.

Air-fry the crepe

Place the pan in a preheated air fryer basket and cook at 190°C for 7 minutes, until the top puffs up and the edges turn lightly golden. If you do not have an air fryer, use the grill setting of an oven preheated to 190°C for the same time.

Reminder

If you thin the batter too much it spreads and stays too thin in the air fryer basket; keep the consistency pourable but self-holding, like a crepe.
