Made by blending beef mince with fine bulgur, these patties raise blood sugar more slowly thanks to the bulgur's fibre, making them a diabetes-friendly option. They can be frozen raw, so they are easy to prepare ahead for picnics and lunchboxes.
Soak the fine bulgur in hot water for 15 minutes, then drain off the excess water.
Knead the beef mince together with the soaked bulgur, grated onion, finely chopped parsley, cumin, black pepper, salt and chilli flakes.
Rest the mixture in the fridge for 30 minutes; this lets the flavours meld and helps the patties hold their shape.
Take roughly 60-gram portions of the mixture and shape into oval patties, then grill over the coals, 4 minutes per side for 8 minutes total.
Do not shape the patties before the mixture has rested for at least 30 minutes, or they may fall apart on the grill. Cook the raw mixture the same day; do not keep it in the fridge for more than 1 day. Allergens: contains wheat (gluten).
