Filter the coffee
5 minPut the dark-roast ground coffee into a metal phin filter, slowly pour over the boiling water and let it drip for 5 minutes.
The signature drink of Vietnamese street cafés, cà phê sữa đá is made by slowly dripping dark-roast coffee, stirring it with condensed milk, and pouring it over ice. The tradition of filtering through a metal phin keeps the coffee dense and smooth.
Put the dark-roast ground coffee into a metal phin filter, slowly pour over the boiling water and let it drip for 5 minutes.
Pour the filtered coffee over the condensed milk and stir until fully combined.
Fill a glass with ice and pour the prepared coffee mixture over it to serve.
Don't rush the filtering — coffee that drips too fast turns watery and won't be dark enough. Allergens: contains milk and dairy.
If you don't have a metal phin filter, a French press gives coffee of a similar strength.
