Inspired by South Africa's spiced vegetable mix chakalaka, these stuffed peppers are filled with bulgur, carrot and a spiced blend before baking. Whole-grain and dairy-free, they bring a colourful option to a party spread.

How to make it?

Hollow out the peppers

Cut off the stems of the peppers and remove the seeds.

Make the filling

Sauté the onion and crushed garlic in olive oil, then add the grated carrot, red pepper powder, cumin and ginger.

Add the bulgur

Stir in the bulgur and grated tomato, season with salt and cook for 4 minutes, then remove from the heat.

Fill the peppers

Fill the peppers with the mixture, leaving room for the bulgur to expand.

Bake

25 min

Bake in an oven preheated to 190°C for 25 minutes, until the peppers are tender.

Reminder

Remember that bulgur swells as it cooks when filling the peppers — overfilling can cause them to split. Allergens: contains gluten (bulgur).
