Chocolate ripple cake is one of the most familiar no-bake cakes in Australian home cooking, made by layering chocolate biscuits with whipped cream into a log. As it chills, the biscuits soften into a genuine cake-like texture.

How to make it?

Whip the cream

Whip the cold cream with the sugar and vanilla until it holds stiff peaks.

Layer the biscuits with cream

15 min

Spread a thin layer of cream on one side of each biscuit and stand them in a row to form a long log.

Cover the log

Cover the whole log with the remaining cream and sprinkle the grated dark chocolate over it.

Chill it

240 min

Wrap the covered log in plastic and chill for at least 4 hours, during which the biscuits soften into a cake-like texture.

Slice and serve

5 min

Slice the rested log on the diagonal and serve.

Reminder

Chill the log for at least 4 hours, or overnight if you can; that's how long it takes for the biscuits to soften and slice like a cake. Allergens: contains wheat (gluten), milk and dairy.

Add a dessertspoon of instant coffee to the cream and you get a mocha-tinged version without upsetting the sweetness balance.
