Mash the dry mixture with a little cold milk until you get a smooth, lump-free paste, then add the remaining milk.
Transfer the mixture to a pot and cook over low heat, stirring constantly, until it boils and thickens.
Stir in the vanilla, then divide among bowls; cover with plastic wrap and chill in the refrigerator for at least two hours.
Important: Keep stirring continuously while adding the starch to the milk, otherwise it may clump at the bottom of the pot. Allergen: contains milk and dairy products. Can be kept in the refrigerator in a sealed container for three days.
If you cover the pudding with plastic wrap while it's still hot, pressing it against the surface, you prevent a skin from forming; the wrap peels off smoothly before serving.
