Put the strawberries, sugar, lemon juice and water in a pot and cook over medium heat until the sugar dissolves and the sauce thickens slightly. Remove from the heat once it reaches your desired consistency.
Let the sauce cool to room temperature, then chill in the refrigerator. It thickens further as it cools. Drizzle over desserts to serve.
Important: Cook the sauce to your preferred consistency — longer simmering gives it a jam-like thickness. Cooling before serving lets the consistency set. Can be kept in a covered jar in the fridge for a week.
Leaving some of the strawberries in chunks and mashing the rest gives a texture that's both pourable and chunky. Lemon juice both brightens the color and helps keep the sauce from spoiling.
