A classic Chinese starter, pidan doufu is made by slicing store-bought century eggs and silken tofu, then dressing them with soy sauce, sesame oil and spring onion; the dish requires no cooking at all.

Slice the ingredients

Slice the century eggs, wetting the knife between cuts, and drain and slice the silken tofu to a similar thickness.

Arrange on a plate

Arrange the tofu and egg slices on a plate, then drizzle with the soy sauce and sesame oil.

Serve

Garnish with spring onion and sesame seeds and serve immediately.

Reminder

Wetting the knife between cuts keeps the yolk from sticking when slicing the century egg. If you do not drain the tofu first, water pools on the plate. Allergens: contains soy and sesame.
