Sauté the onions in oil over low heat until softened, then add the crushed garlic and sauté a few seconds more.
Raise the heat and add the spleen strips; stirring constantly, sauté until the color changes and it's cooked through.
Add the cumin, salt, and black pepper and mix; serve hot.
Contains no allergens. Important: Use medium-high heat when sautéing the spleen; cooking it for a long time over low heat causes it to release its liquid and turn into a boiled-like texture.
