This hearty recipe is a Turkish breakfast-table classic, made by pan-frying thinly sliced beef liver with onion and spices in just a few minutes. Slicing the liver thin is what keeps the centre tender instead of turning rubbery in the short cooking time. Being freezable in small cooked portions also means it can easily be packed into a lunchbox.

How to make it?

Coat the liver in flour

Lightly coat the thinly sliced liver in flour.

Sauté

Sauté the onion in olive oil, add the liver and sauté together with the red pepper flakes and salt for 10 minutes.

Serve with sumac

2 min

Transfer the liver to a serving plate and sprinkle a pinch of sumac over it.

Reminder

If you slice the liver thick, the centre can stay raw within the short cooking time — be sure to slice it thin. Allergens: contains gluten (flour).

Ciğeri tarifteki 10 dakika yerine 14 dakika pişirdim, dışı biraz daha koyu renk aldı ama içi hâlâ yumuşacıktı, 500 gram için bu süre bende gayet iyi sonuç verdi.
