Named 'Fatima's fingers', doigts de fatima are a Tunisian classic made by rolling a spiced minced meat filling in thin pastry and frying it. Their long finger shape makes them easy to pack into picnic baskets and lunch boxes.

How to make it?

Prepare the filling

Knead the minced meat with the grated onion, parsley, egg, cumin, harissa and salt until you have a smooth, well-combined filling.

Roll in the pastry

15 min

Cut each pastry sheet in half, place a finger-thick line of filling at one end, dampen the edges with water and roll up tightly.

Fry them

10 min

Fry the rolls in plenty of medium-hot oil for 10 minutes, turning until golden on all sides, then drain on paper towel.

Reminder

Dampen the edges of the pastry with water and seal tightly, or the filling will spill out during frying. Keep the oil at medium heat; too hot and the outside burns while the inside stays raw. Allergens: contains wheat (gluten) and egg.

Brush lightly with oil and bake at 200°C instead of frying for a lighter result; the surface just won't be quite as crisp.

Sarmaları 10 dakikada tam istediğim altın rengine getirdim, yağın orta ısıda kalması gerçekten fark yaratıyor. Piknik için bir gün önceden sarıp buzdolabında bekletmem de sorun olmadı, ertesi gün aynı çıtırlıkta kızardı.
