Moroccan cuisine's cumin and sweet paprika duo comes together quickly in a pressure cooker in this stew, putting leftover carrots to good use. Adding a small amount of bulgur brings in a whole-grain texture without upsetting the low-carb balance.

Step by Step

How to make it?

1

Sauté the vegetables

5 min

Sauté the onion and carrot in olive oil for 5 minutes.

2

Add the liver

5 min

Add the lamb liver and sauté for 5 more minutes.

3

Cook

8 min

Add the tomato, bulgur, cumin, paprika, water and salt, seal the pressure cooker lid, and once it reaches pressure, cook for 8 minutes.

4

Serve

5 min

Release the pressure and serve.

Reminder

Don't sauté the liver for too long; overcooked liver toughens into a rubbery texture. Allergens: contains wheat (gluten, bulgur).
