How to make it?

Grate the Apple

Grate the apples with the skin on and drizzle with lemon juice to stop them browning.

Mix the Ingredients

Combine the grated apple with the rolled oats, cinnamon and finely chopped dried apricot in a bowl.

Shape the Bites

Roll small balls of the mixture in your palm and coat each one in desiccated coconut.

Reminder

If the mixture sticks to your hands, wet them lightly before shaping; the apricots' natural sweetness is enough on its own. Stored in the fridge, the bites stay fresh for 3 days.

Raisins can replace the dried apricots, but since they are smaller, adding a little extra oats to the mixture makes shaping the balls easier.
