A light Armenian starter, itch is made by soaking fine bulgur in boiling water and mixing it with tomato paste, pomegranate molasses and plenty of parsley. Since it needs no real cooking, it's an easy dish to prepare even on hot days.

How to make it?

Soak the bulgur

Put the fine bulgur in a bowl, pour over enough boiling water to cover it, cover and let it sit for 15 minutes.

Make the tomato mixture

8 min

Sauté the grated onion and crushed garlic in olive oil, then add the tomato paste and cook for 8 minutes.

Combine and rest

10 min

Fold the soaked bulgur into the tomato mixture with the pomegranate molasses, parsley and salt, kneading well; let it rest for 10 minutes before serving.

Reminder

Don't mix in the bulgur without draining it first, or the extra water will make the salad watery. Allergens: contains gluten (bulgur).

Bulguru 15 dakika beklettim ama suyunu süzmeden karıştırınca salata sulu çıktı, çocuklarım ekmeğe bulayamadı. Nar ekşisini de biraz fazla koymuşum, ekşiliği bastırdı; bir dahaki sefere yarım doz ile başlayacağım.
