Avocado, jackfruit and coconut jelly are combined with coconut milk and ice to make es teler, a beloved Indonesian street dessert. Adding the fruit in the right order and getting the syrup's consistency right takes a bit of practiced balance.

Chill the syrup in the fridge for 20 minutes until thoroughly cold.
Cube the avocado and layer it into glasses along with the jackfruit slices and coconut jelly.
Pour the coconut milk and chilled syrup evenly over the fruit.
Top with crushed ice and serve right away.
Layer the fruit from heaviest to lightest in the glass, or the syrup will not settle evenly and the mix will look uneven. Add the ice just before serving; added too early it waters the dessert down.
If jackfruit is unavailable, ripe banana slices work instead; since banana softens faster, add it right before serving to keep its texture.
