A minced meat and rice filling is rolled in spinach leaves and cooked in a pressure cooker in this practical recipe, which also works cold, making it lunchbox-friendly. It comes together quickly with few ingredients.

How to make it?

Prepare the leaves

Trim the stems off the spinach leaves, blanch briefly in boiling water, then drain and plunge into cold water.

Prepare the filling

10 min

Knead together the minced meat, rice, grated onion, tomato paste, salt and pepper.

Roll

15 min

Place a teaspoon of filling on each leaf, roll up tightly and pack snugly into the pressure cooker.

Cook in the pressure cooker

20 min

Add the hot water and oil, seal the lid, and cook over low heat for 20 minutes once it starts hissing.

Reminder

If you blanch the leaves too long they tear easily while rolling, a few seconds is enough. The rolls taste fine cold, so you can make them a day ahead and pack them for lunch.

Salça bende yoktu, yerine iki kaşık domates rendesi kullandım; harç beklediğimden biraz daha sulu oldu ama düdüklü tencerede 20 dakikada yine de güzel toplandı, sarma dağılmadı.
