Traditional meaty kuru fasulye, slow-cooked with cubed beef until the beans are soft yet hold their shape. One of the most beloved stew dishes of Turkish cuisine, it is the centerpiece of a table set with rice and pickles on the side.

How to make it?

Prepare the beans

Drain the dried beans you soaked overnight. Pre-boil the beans in a separate pot with enough water to cover them over medium heat for fifteen minutes, then discard the water; this step reduces their gas-forming effect. Caution: Do not add salt at this stage.

Sear the meat

10 min

Heat the vegetable oil in a pot, add the diced meat and sauté over medium-high heat until it releases its liquid and reabsorbs it, and the edges are lightly browned. Searing the meat helps it retain its juices.

Add the onion and tomato paste

5 min

Add the chopped onion and sauté until it turns pink. Add the tomato and pepper paste and continue sautéing for another minute or two, until the raw smell of the paste disappears.

Cook

70 min

Add the pre-boiled beans, black pepper, and hot water. Cover with a lid and cook over low heat until the beans are soft and the water has thickened. Check occasionally and add hot water if needed.

Adjust the salt and let it rest

15 min

Important: Once the beans are fully soft, add the salt and cook for five more minutes. Turn off the heat and let it rest for ten minutes; resting allows it to reach the right consistency. When serving, sprinkle red pepper flakes on top and serve with rice and pickles on the side.

Reminder

Soaking dried beans overnight in plenty of water shortens the cooking time and makes them easier to digest. Important: Add the salt only after the beans have softened well; salt added too early toughens the skins and delays cooking. Ingredient and cross-contact warnings for packaged products like tomato paste can vary by brand; check the labels as well.

To thicken the beans' sauce, mash a few spoons of cooked beans in the last ten minutes of cooking and stir them back into the pot; the starch naturally binds the sauce and gives you a more velvety broth.
