This dish rolls out an egg dough by hand into thin sheets, cuts it into noodles and folds them through leftover kavurma in butter. Rolling and cutting the dough evenly by hand is what makes this a genuine test of skill.

How to make it?

Knead the dough

Knead the flour with the eggs and salt until you have an elastic dough.

Rest the dough

Wrap the dough in cling film and rest it for 10 minutes.

Roll and cut

20 min

Roll the dough out on a floured surface until almost translucent, let it air-dry briefly, then cut into thin strips; uneven thickness means uneven cooking.

Boil the noodles

Boil the cut noodles in salted water for 4-5 minutes, then drain.

Toss with the kavurma

8 min

Sauté the onion in butter until softened, add the leftover kavurma and black pepper and warm through. Pour over the drained noodles and toss to combine.

Reminder

Rest the dough for 10 minutes before rolling, or it stays elastic and will not roll out thinly. Allergens: contains wheat (gluten), egg and dairy (butter).

Erişteyi elle kesmek epey uğraştırdı ama sonuç lokantadakinden farksızdı. Kavurmayla harika gitti.
