A pure and natural drink obtained by freshly squeezing pomegranate seeds. With its sweet-tart balance, it can be enjoyed on its own or used as a sauce in salads and dishes.
Cut the pomegranates in half and separate the seeds in a bowl of water, skimming off and discarding the membranes that float to the surface.
Blend the separated pomegranate seeds briefly and strain through a fine sieve or cheesecloth.
If you want to balance the tartness of the juice, add a little water and stir.
Chill the pomegranate juice in the refrigerator and divide into glasses to serve.
Important: Deseeding pomegranate in water makes the job easier — the seeds sink to the bottom while the membranes float on the surface. Freshly squeezed pomegranate juice from sour varieties can taste quite sharp; you can add a little honey to sweeten it if you like.
If you strain the pomegranate juice through a fine cheesecloth after squeezing, you get a clear drink completely free of peel and membrane residue.
