A dish seen at Moroccan celebrations, trid is made by pouring a ginger-and-paprika chicken stew over layers of crisped flatbread. Free of nuts, this version is also a safe option for guests with hazelnut allergies.

How to make it?

Sauté the onions

Sauté the onion, garlic and ginger in olive oil until soft.

Sear the chicken

Add the chicken thigh pieces, stir in the paprika, cumin, salt and black pepper, and sear for 5 minutes.

Simmer the stew

15 min

Add a cup of water, cover and simmer over low heat for 15 minutes until the chicken is tender.

Crisp the flatbread

8 min

Lightly crisp the flatbread on both sides in a dry pan, break into pieces and arrange on the base of a serving plate.

Pour over and serve

Pour the chicken stew over the flatbread pieces, sprinkle with coriander and serve hot.

Reminder

Take the flatbread off the heat before it darkens too much, or it turns bitter once it soaks up the stew. Allergens: contains wheat (gluten).

Using fresh ginger instead of ground gives a sharper aroma; in that case I would halve the amount, as fresh ginger is stronger than the dried version.
