Forshmak is a no-cook Ukrainian spread made by processing salted herring with hard-boiled egg, apple and onion into a smooth pâté. Getting the herring's saltiness to balance properly against the apple's sweetness takes real skill. It can be spread on a breakfast slice and packed into a lunchbox, or carried to a picnic in a sealed container.

How to make it?

Desalt the herring

30 min

Soak the herring in cold water for at least 30 minutes, changing the water once to reduce its saltiness.

Process the ingredients

10 min

Process the herring with the hard-boiled egg, apple and onion in a food processor until smooth.

Balance the flavour

3 min

Stir in the olive oil and lemon juice, tasting and adjusting the balance.

Serve

2 min

Transfer the pâté to a bowl, chill in the fridge and serve.

Reminder

Soak the herring in cold water for at least 30 minutes before processing to reduce its saltiness, or the pâté comes out too salty. Allergens: contains fish and egg.
