Gorditas are a Mexican street food made by kneading thick corn masa dough with baking powder, splitting it open and stuffing it with cheese and ground beef. Cooking them in the air fryer uses far less oil than the traditional deep fry.
Mix the corn flour, baking powder and salt, then gradually add the hot water, kneading until smooth. Divide the dough into 8 pieces and shape into balls.
Sauté the onion in vegetable oil until translucent, add the ground beef and cook for 8 minutes until the liquid evaporates, then stir in the cumin.
Flatten the dough balls into thick discs, lightly sear both sides in a pan, slit each one open to make a pocket, stuff with the ground beef and kashar cheese, and seal the edges firmly.
Arrange the stuffed gorditas in a preheated air fryer basket and cook at 190°C for 10 minutes, until the kashar cheese melts and the outside turns crisp. If you do not have an air fryer, bake them for the same time in an oven preheated to 190°C.
Seal the edges of the dough pocket well when folding it, or the filling will leak out in the air fryer. Allergens: contains milk and dairy.
