Gujiya is a sweet Indian pastry made by filling thinly rolled dough with a coconut and sugar mixture and sealing it into a crescent shape. Using an air fryer instead of deep-frying speeds up the cooking.
Rub the flour with the melted butter, gradually add the water and knead into a firm dough, then cover and rest for 15 minutes.
Lightly toast the grated coconut in a dry pan, stir in the sugar and cardamom, then remove from the heat and let it cool.
Roll the dough into small thin rounds, place a teaspoon of the coconut filling in the centre, moisten the edges with water and fold into a crescent, pressing to seal firmly.
Arrange the filled pastries in a preheated air fryer basket and cook at 180°C for 10 minutes, until golden on top. If you do not have an air fryer, bake them for the same time in an oven preheated to 180°C.
If you seal the edges without moistening them with water, they will open while cooking; press firmly with your finger to seal. Allergens: contains wheat (gluten) and dairy.
