A traditional Lebanese carob drink, this cordial is made by quickly simmering dried carob pods in a pressure cooker to extract their essence. With no added sweetener, it's a ketogenic drink suited to a late-night craving or a between-meal break.
Rinse the dried carob pieces under running water.
Put the carob and water in the pressure cooker, seal the lid and cook over low heat for 15 minutes once it whistles.
Remove the pot from the heat and let the steam release naturally for 8 minutes.
Strain the mixture through a fine sieve, discard the carob pieces, stir in the lemon juice and serve chilled.
Press down firmly on the carob pieces while straining to extract all their essence, or the drink will taste weak.
For a thicker cordial, simmer the strained liquid for 5 more minutes to reduce it further.
