Known in India as 'golden milk', this drink is made by warming coconut milk with turmeric, cinnamon and black pepper over low heat. Its character comes only from the spices' own aroma.

Mix the Spices

Mix the turmeric, cinnamon and black pepper together in a small bowl.

Warm the Milk

Warm the coconut milk in a pot over low heat, add the spice mix, and continue warming for 6 minutes while stirring, without letting it boil.

Strain and Serve

If you like, strain out the spice sediment through a fine sieve and serve hot.

Reminder

Important: don't let the mixture boil, just warm it; boiling can cause the coconut milk to separate.

The black pepper is added because it helps the body make better use of the turmeric; even a small pinch is enough, and too much leaves a noticeable sharpness in the drink.

Benim ocağım kısık ayarda bile epey hızlı ısıtıyor, 6 dakika daha bitmeden karışım köpürmeye başladı, süreyi 4 dakikaya indirince çok daha kontrollü hâle geldi, bir daha da hiç taşırmadım tencereden.

Tarifte dendiği gibi hiç kaynatmadan 6 dakika ısıttım, hindistan cevizi sütü hiç ayrışmadı, çok kremamsı kaldı sonuna kadar. Karabiberin verdiği hafif keskinlik de dengeyi hiç bozmadı bence.
