Drawing on Saudi Arabia's date tradition, this compote is made by pressure-cooking dates with oats and cinnamon into a soft, spoonable dessert. The whole-grain oats turn the compote into a filling mid-day option.

How to make it?

Prepare the dates

Chop the pitted dates and place them in the pressure cooker.

Pressure-cook

10 min

Add the oats, water, cinnamon and lemon juice, close the lid and cook for 10 minutes from the first hiss.

Let the pressure release

10 min

Remove from the heat and let the pressure release naturally.

Mash and serve

5 min

Open the lid and lightly mash the mixture with a fork to a soft consistency, then serve warm or cold.

Reminder

Wait for the pressure to release naturally before opening the cooker, or the hot liquid may splash.
