Ijjeh is a hearty Jordanian egg dish made by mixing spinach, spring onion and herbs into beaten eggs and baking them until set. Because it slices neatly and can be eaten cold, it travels well for a picnic.
Finely chop the spinach, spring onion, parsley and dill and combine them in a large bowl.
Beat the eggs and whisk in the flour, salt, pepper and cumin until smooth, then fold in the chopped greens.
Grease a baking tray with olive oil, pour in the mixture and bake in an oven preheated to 180°C for 30 minutes until lightly golden on top.
Let the bake rest for 5 minutes out of the oven before slicing and serving.
Grease the baking tray well before putting it in the oven, or the base will stick and break apart when sliced. Allergens: contains wheat (gluten) and egg.
Using chard instead of spinach gives a wetter mixture; adding an extra spoon of flour will bring the batter back together.
