A winter pantry favourite in Iraq, this compote slowly simmers dried apricots and dates with cinnamon until they thicken with their own natural sugars. Needing no added sugar, it makes a light, fibre-rich dessert that supports heart health.

How to make it?

Soak the fruit

60 min

Soak the dried apricots and dates in plenty of water for 1 hour, then drain; this helps the fruit soften more evenly.

Simmer

35 min

Put the drained fruit in a pot with fresh water and the cinnamon stick, and simmer over low heat with the lid slightly ajar for 35 minutes.

Finish with lemon

5 min

Stir in the lemon juice off the heat, let it cool to room temperature and serve chilled from the fridge.

Reminder

Leave the lid slightly ajar while simmering the compote; a fully closed lid traps steam and makes the fruit break down too much.
