A hearty Irish breakfast classic, liver and onions is made by quickly pan-searing thinly sliced beef liver and serving it with a rich onion gravy speeded up in a pressure cooker. Made without flour, the gravy also suits a ketogenic diet.

How to make it?

Make the onion gravy

Sauté the onion in the butter in the pressure cooker for 3 minutes, add the beef stock, seal and cook for 8 minutes once it reaches pressure to get a thick gravy.

Cook the liver

Quickly cook the beef liver in a separate pan with salt and black pepper for 6 minutes.

Combine and serve

Add the cooked liver to the onion gravy and stir over heat for 2 minutes.

Reminder

Don't overcook the liver, go past 6 minutes and the texture turns tough and rubbery. Allergens: contains milk and dairy (butter).
