A classic of Irish home baking, this apple cake is made by hiding cinnamon-dusted apple slices inside a buttery batter before baking. Served warm, the apples' juice seeps into the crumb and keeps the cake moist.

How to make it?

Prepare the batter

Beat the soft butter with the sugar, add the eggs one at a time, then sift in the flour, baking powder and salt with the milk to make a smooth batter.

Layer the apples

Spread half the batter in a greased tin, arrange half the cinnamon-tossed apple slices on top, pour over the remaining batter and arrange the rest of the apples on top.

Bake

33 min

Bake in an oven preheated to 180°C for 33 minutes, until a skewer comes out clean, and serve warm.

Reminder

Do not slice the apples too thin — they can release too much water in the oven and thin out the batter; medium-thick slices keep the cake's texture intact. Allergens: contains wheat (gluten), dairy, egg.
