Inspired by colcannon, Ireland's beloved cabbage dish, this bake folds sautéed cabbage and ground beef into whole-wheat pasta before finishing under melted cheddar. The cabbage's faintly sweet texture adds a layered depth to the beef sauce.

Add the shredded cabbage, beef stock, thyme and bay leaf, and simmer uncovered over low heat for 25 minutes until the cabbage softens and the sauce thickens.
Meanwhile, boil the whole-wheat pasta in salted water for 2 minutes less than the packet instructs, then drain.
Mix the drained pasta with the sauce, transfer to a baking dish, top with the grated cheddar and bake in an oven preheated to 190°C for 15 minutes until the cheese melts and lightly browns.
