A lesser-known breakfast classic in Turkish cuisine, fried tripe is made by soaking cleaned tripe in vinegar water, then coating and frying it. The garlicky vinegar sauce served alongside balances its aroma and rounds out the flavour.

How to make it?

Soak

Soak the tripe in vinegar water for 15 minutes; this reduces its odour.

Prepare the tripe

Rinse the boiled tripe and cut it into thin strips.

Coat

Dip the tripe strips in beaten egg, then coat them in a mixture of flour, salt and pepper.

Fry

Heat the vegetable oil in a pan and fry the tripe in batches until golden and crisp.

Make the garlic sauce and serve

Mix the crushed garlic with vinegar and serve it alongside in a small bowl; serve the fried tripe hot.

Reminder

Pat the tripe thoroughly dry before frying, or the oil will spatter and the coating will not stick properly. Allergens: contains gluten (flour) and egg.
