Ground meat and spinach are simmered together quickly in a pressure cooker and finished with cracked eggs on top for this skillet dish, made for anyone after a filling, low-carb breakfast without bread. Made without dairy, it also suits those with lactose sensitivity.

How to make it?

Brown the meat

Heat the olive oil in the pressure cooker and sauté the onion until soft, then add the ground meat and cook for 8 minutes until it changes colour.

Pressure-cook

10 min

Add the diced tomato, spinach, red pepper flakes, salt and black pepper, then seal the lid. Once it hisses, cook on low heat for 10 minutes and let the pressure release naturally.

Add the eggs

Open the lid, transfer the mixture to a wide pan, crack the eggs on top one by one, and cook for 8 more minutes with the lid slightly ajar until the whites set.

Rest and serve

2 min

Turn off the heat and let the skillet rest for 2 minutes, checking the yolks are the consistency you want, then serve hot.

Reminder

After cracking in the eggs, leave the lid slightly ajar; sealing it fully makes the egg whites set harder than they should. Allergens: contains egg.
