A lake-country staple from Austria's Salzkammergut, pike-perch is rubbed with olive oil and sweet paprika, grilled, then finished with a buttery caper-thyme sauce. Prepared as boneless fillets, it makes a light but satisfying dinner.
Pat the pike-perch fillets dry and rub both sides with salt, black pepper and sweet paprika.
Heat an oiled grill over high heat, place the fillets skin-side down and cook for 4 minutes, then flip and cook 3 minutes more.
Melt the butter in a small pan, sauté the crushed garlic and capers for 1 minute, then stir in the thyme leaves and lemon juice.
Plate the fillets, spoon over the caper-thyme sauce, garnish with lemon zest and serve immediately.
Pat the fillets completely dry before grilling, or the skin will stick and tear. Allergens: contains milk and dairy.
If you cannot find pike-perch, sea bass fillets cook in the same time with little change in flavour. Finely chopped pickled cucumber can stand in for the capers with a similar sharp, salty note.
