A staple of Argentina's barbecue culture, brochetas thread cubed beef with bell pepper, onion and zucchini onto skewers and grill them over coals. Marinating the beef for an hour is what makes it tender and gives it flavour on the grill.

How to make it?

Marinate the beef

Toss the cubed beef with the olive oil, garlic, oregano, lemon juice, salt and pepper and let it marinate, covered, in the fridge for 60 minutes.

Thread the skewers

10 min

Thread the beef onto skewers, alternating with the bell pepper, onion and zucchini pieces.

Grill

12 min

Grill the skewers over medium-high coals, turning occasionally, for 12 minutes until the beef is medium and the vegetables have taken on a little colour.

Reminder

If using wooden skewers, soak them in water for 20 minutes before threading — otherwise they can catch fire on the grill.

You can use eggplant instead of zucchini; since it needs a bit longer to cook, cut it into cubes the same size as the beef.

Bir saatlik marine süresi benim için pratik değildi, akşam işten gelince beklemeye vaktim olmadı, 15 dakika marine edip pişirdim ve et biraz sertleşti. Sebzeler güzel renk aldı ama et için bu kısayol işe yaramadı.
