Beef liver is quickly pan-fried with onion, fresh thyme and scotch bonnet pepper to make the fiery breakfast classic of Jamaican tables. Cooking the liver without toughening its texture takes care, and the right timing keeps the outside from turning rubbery.

Prepare the Liver

Season the sliced beef liver with salt and black pepper.

Cook the Onion

Cook the onion and scotch bonnet pepper in olive oil for 8 minutes, until soft.

Add and Cook the Liver

Add the liver to the pan with the fresh thyme and cook each side for 4 minutes, taking care to keep it pink inside.

Serve

Transfer to a plate and serve while hot.

Reminder

Wear gloves while deseeding the scotch bonnet, and avoid touching your eyes afterwards. Do not overcook the liver, or it turns tough and rubbery.

Ciğer 8 dakikada tam istediğim pembe kıvamda pişti, scotch bonnetin acısı da dengeliydi. Kahvaltı sofrasına enerji kattı.
