This recipe thinly slices yesterday's leftover roast beef and quickly sautés it in a pomegranate-molasses sauce, turning it into a new dinner, though it takes a careful hand to reheat the meat without breaking its fibers. Sauté the aromatics

Heat the olive oil, add the julienned onion and crushed garlic, and sauté for 5 minutes until softened.

Add the meat

Add the thinly sliced roast beef to the pan and toss over high heat for 3 minutes to warm through, taking care not to overcook it.

Make the sauce

Add the pomegranate molasses, a pinch of thyme, salt and pepper, and keep stirring for 4 more minutes until the sauce thickens.

Make sure the sauce coats the meat in a thin glaze and serve hot.

Reminder

Leaving the meat in the pan too long will dry it out; a brief toss to warm it through is enough. If you do not thicken the sauce over low heat, it will pool on the plate instead of clinging to the meat.
